when you have trouble cutting stuff! sounds stupid but it my rule of thumb.
What is wrong with your knives? If they are dull, have them sharpened. If the handles are falling off them because they are cheap or you didnt take care of them then replace them. I had a chef instructor that still had knives in excellent condition that he bought in the 60s. You dont just throw away a good knife, you take care of them. Keep them sharp, hand wash them, hone them before and after each use, etc.
When the blade is shot. If there are knicks or grooves in the blade, or if the handle is loose, or discolored…. Knicks and grooves will always affect the way it cuts and how well it can be sharpened. You can always find a knife sharpener in the yellow pages and take it to them and get a pro’s opinion, just dont buy anything from them, and go online to find good knifes for less money.
I got the Furi Rachael Ray Knife set. I got it on ebay for about $40 less than the price they charge on foodtv.com Pretty good knives with nice handles and a blade that can get really sharp. I recommend them for an affordable good knife set.

If you have a good set of knives, all you have to do is have them sharpened. My knives are 45 years old and they are still good.
Chicago Cutlery makes fantastic knife sets, have had mine 20 years and still going strong. That’s the key with knives, buy great the first time and you’ll no longer have to replace them.
A good knife will last a lifetime.
Don’t get many knives with serrated edges, especially the ones with fine serrations — they’re not designed to be sharpened. Bread knives, with their longer serrations, are OK.
Don’t wash them in the dishwasher, wash them by hand so the heat of the dishwasher and the harsh chemicals in the dishwasher detergent doesn’t damage them.
J. A. Henckels knives (especially the Twin series) are excellent knives. Albeit somewhat pricey, you do get what you pay for.
Buy a good steel and DON’T use the knife sharpener often found on can openers. Learn to use that steel, and keep the knife in a wooden block.
If the knife you already have is still more or less sound (no huge nicks in the blade) then take it to a good cutlery shop and have them sharpen it for you (unless it’s got the fine serrations– those really can’t be resharpened.)

Find a local knife shop and take them in for sharpening. They will tell you if that will help them or if they are beyond redemption. Knifes generally last a long time with proper care. The shop may even have a good sharpener you can purchase for your home.
If money were no object, I’d buy Global knifes, and invest in a ceramic knife as well. Any good kitchen supply/knife store will let you hold them knifes before you buy them. Make sure the weight is balanced and they feel comfortable to you.
